摘要:近年來，隨著經(jīng)濟(jì)的不斷發(fā)展和人們生活水平的日益提高，餐飲業(yè)呈現(xiàn)出蓬勃的發(fā)展趨勢(shì)。為了適應(yīng)這一發(fā)展趨勢(shì)，除了進(jìn)一步合理膳食外，更應(yīng)該重視內(nèi)部設(shè)計(jì)的特色，來適應(yīng)現(xiàn)代人們對(duì)餐飲環(huán)境舒適、隆重、浪漫的不同要求。而在現(xiàn)代餐飲空間中富有中國(guó)傳統(tǒng)韻味的環(huán)境氛圍，更可以滿足人們?cè)谛睦砩蠈?duì)歸屬感的需求，所以創(chuàng)造具有中國(guó)傳統(tǒng)文化特色的現(xiàn)代餐飲空間既是一種文化的傳承，也是人們?cè)谏钪械囊环N物質(zhì)與精神上的追求。 餐飲空間在這個(gè)時(shí)代中無疑將作為承載大眾飲食時(shí)光的一種有效載體。經(jīng)濟(jì)的發(fā)展，社會(huì)的進(jìn)步導(dǎo)致人們的意識(shí)也呈現(xiàn)多元化，人們對(duì)物質(zhì)生活和精神生活提出新的要求。從而更加追求個(gè)性化、高品位的餐飲進(jìn)餐環(huán)境，這也為廣大餐飲空間設(shè)計(jì)工作者帶來了新的機(jī)遇和挑戰(zhàn)。目前全國(guó)各地關(guān)于餐飲空間的打造如火如荼，目標(biāo)都是為了提高大眾飲食的品味與質(zhì)量。如何立足與本國(guó)自身文化進(jìn)行繼承與創(chuàng)新多年來一直是環(huán)境設(shè)計(jì)關(guān)注的焦點(diǎn)，但現(xiàn)在仍然處于不斷摸索前進(jìn)的過程中。把環(huán)境作為一種符號(hào)現(xiàn)象，這也為繼承和創(chuàng)新的良好結(jié)合提供了有益的思路。一個(gè)民族由于自然條件、經(jīng)濟(jì)技術(shù)、社會(huì)文化習(xí)俗的不同，環(huán)境中總會(huì)有一些特殊的符號(hào)和排列方式。同時(shí)傳統(tǒng)文化符號(hào)總是以簡(jiǎn)化的形式來表現(xiàn)他的意義，它經(jīng)歷了由個(gè)別到一般的抽象過程。這正是我們可以將之巧妙運(yùn)用于餐飲空間的原因。 本文對(duì)傳統(tǒng)文化符號(hào)在餐飲空間的應(yīng)用做了嘗試性的研究，通過傳統(tǒng)文化符號(hào)與設(shè)計(jì)符號(hào)的合理嫁接，創(chuàng)造出富有地方、年代、民族特色的餐飲空間，使其更好的滿足人們物質(zhì)和精神需求。文章的第一部分介紹了傳統(tǒng)文化符號(hào)的基本概念及特征；第二部分與實(shí)例相結(jié)合闡述了傳統(tǒng)文化符號(hào)運(yùn)用在餐飲空間的重要作用及其目的意義；第三部分結(jié)合實(shí)例表現(xiàn)出傳統(tǒng)文化符號(hào)在餐飲空間中的應(yīng)用；最后一部分總結(jié)全文。 關(guān)鍵詞：傳統(tǒng)文化符號(hào) 餐飲空間 繼承 應(yīng)用
Abstract:In recent years, with the development of economy and the improvement of people's standard of living, food and beverage industry displays the flourishing developing trend. In order to adapt to this trend of development, in addition to a reasonable diet, more should pay attention to interior design features, to adapt to different requirements of modern people on the restaurant environment is comfortable, grand, romantic. In modern catering space full of Chinese flavor of the traditional environment, more can satisfy people sense of belonging in the psychological need, so the creation of the modern dining space is not only has the characteristic of Chinese traditional culture of a kind of cultural heritage, but also the people in the life of a kind of matter and spirit pursuit. The dining space in this era will no doubt as a bearer of an effective carrier mass diet time. Economic development, social progress in people's awareness has also diversified, people put forward new requirements to the material life and spiritual life. Thus the pursuit of more personalized, high-grade restaurant dining environment, it also brings new opportunities and challenges for the dining space design workers. At present all over the country on the dining space to create the like a raging fire, the goal is to improve the taste and quality of the diet. How to survive and national culture inheritance and innovation over the years has been the focus of environmental design concern, but now is still in groping forward process. The environment as a kind of symbol phenomena, it also provides useful ideas for the good combination of inheritance and innovation. A nation because of natural conditions, economic, social culture and customs of different, the environment there will always be some special symbols and arrangement. At the same time, the traditional culture symbol is always in a simplified form to express his meaning, it has experienced the process from individual to general. This is where we can be skillfully used in the restaurant space. This paper tries to do some research on the application of traditional cultural symbols in the dining space, through reasonable grafting traditional cultural symbols and symbols design, to create a rich place, age, ethnic characteristics of dining space, make it better meet the material and spiritual needs of the people. The first part of the article introduces the basic concept and characteristics of traditional cultural symbols; the second part combine examples illustrates the traditional cultural symbols using the important role in the dining space and its purpose and significance; the third part with examples show the application of traditional cultural symbols in the dining space; the last section summarizes the full text.
