摘要:蒙自石榴占全國(guó)石榴總量的三分之一，不管在種植面積還是石榴品質(zhì)上都是處于全國(guó)領(lǐng)先的位置，但是蒙自石榴的深加工工藝還未成熟。目前，國(guó)內(nèi)外已經(jīng)對(duì)許多植物的果皮進(jìn)行了多酚類(lèi)物質(zhì)的提取和應(yīng)用研究，如：葡萄皮、香蕉皮等的研究，而對(duì)石榴皮作為一種重要的多酚資源尚未見(jiàn)研究利用的報(bào)道。本文以采摘后的蒙自甜石榴皮為原料，用丙酮作為提取劑采用索氏回流提取，對(duì)其石榴皮丙酮提取物，通過(guò)FRAP實(shí)驗(yàn)進(jìn)行抗氧化性研究，從而找出最佳提取條件為：6號(hào)篩（100目）、提取前浸泡1.5h、溶劑濃度為85%丙酮、提取時(shí)間30min、料液比2:30。在此條件下：索氏回流提取效果最好，硫酸亞鐵含量為81.971umol/L。同時(shí)：多酚、黃酮含量與所做抗氧化性實(shí)驗(yàn)所得的硫酸亞鐵含量正相關(guān)，即在上述最佳條件下，總多酚含量為11.257mg/g，總黃酮含量為1.627mg/g。通過(guò)對(duì)POV抗氧化比較石榴皮丙酮提取物與其他抗氧化劑（如VC、VE等）的對(duì)豬油抗氧化性差異；可知總體來(lái)說(shuō)維生素E的抗氧化性顯著比維生素C和石榴皮丙酮提取物抗氧化性高的多。然而從本實(shí)驗(yàn)可看出石榴皮丙酮提物具有一定抗氧化活性。 關(guān)鍵詞：石榴皮；丙酮；抗氧化性
