摘要:蒙自石榴占全國(guó)石榴總量的三分之一,不管在種植面積還是石榴品質(zhì)上都是處于全國(guó)領(lǐng)先的位置,但是蒙自石榴的深加工工藝還未成熟。目前,國(guó)內(nèi)外已經(jīng)對(duì)許多植物的果皮進(jìn)行了多酚類(lèi)物質(zhì)的提取和應(yīng)用研究,如:葡萄皮、香蕉皮等的研究,而對(duì)石榴皮作為一種重要的多酚資源尚未見(jiàn)研究利用的報(bào)道。本文以采摘后的蒙自甜石榴皮為原料,用丙酮作為提取劑采用索氏回流提取,對(duì)其石榴皮丙酮提取物,通過(guò)FRAP實(shí)驗(yàn)進(jìn)行抗氧化性研究,從而找出最佳提取條件為:6號(hào)篩(100目)、提取前浸泡1.5h、溶劑濃度為85%丙酮、提取時(shí)間30min、料液比2:30。在此條件下:索氏回流提取效果最好,硫酸亞鐵含量為81.971umol/L。同時(shí):多酚、黃酮含量與所做抗氧化性實(shí)驗(yàn)所得的硫酸亞鐵含量正相關(guān),即在上述最佳條件下,總多酚含量為11.257mg/g,總黃酮含量為1.627mg/g。通過(guò)對(duì)POV抗氧化比較石榴皮丙酮提取物與其他抗氧化劑(如VC、VE等)的對(duì)豬油抗氧化性差異;可知總體來(lái)說(shuō)維生素E的抗氧化性顯著比維生素C和石榴皮丙酮提取物抗氧化性高的多。然而從本實(shí)驗(yàn)可看出石榴皮丙酮提物具有一定抗氧化活性。 關(guān)鍵詞:石榴皮;丙酮;抗氧化性

Under these conditions: the best Soxhlet reflux extraction, ferrous sulfate content 81.971umol/L. At the same time: polyphenols, flavonoids and antioxidant activity made from ferrous sulfate experiment positively correlated, that is, the optimum conditions, the total polyphenol content was 11.257mg/g, total flavonoids content was 1.627mg/g.
