摘 要:食品加工機(jī)械是機(jī)械的一個(gè)重要發(fā)展方向之一，也是國(guó)計(jì)民生的大事，肉食品加工尤其重要。肉食品加工機(jī)除滿足生產(chǎn)力的需要外，還需滿足全民食品安全衛(wèi)生的需要。 我國(guó)是世界上飼養(yǎng)畜禽最多的國(guó)家，同時(shí)也是人口最多的國(guó)家。由于人口基數(shù)的過(guò)大，肉制品的需求也大，但是現(xiàn)有的肉糜加工機(jī)還是離不開(kāi)大量的人工操作。由于我國(guó)的肉制品加工的基礎(chǔ)較差，與國(guó)外先進(jìn)的肉糜加工水平仍有較大差距，相信隨著肉糜加工產(chǎn)業(yè)的不斷發(fā)展，這些差距也會(huì)越來(lái)越小。肉糜切割的廣闊市場(chǎng)，使得國(guó)內(nèi)外科研工作者對(duì)肉糜加工技術(shù)進(jìn)行不斷深入的研究，推動(dòng)者肉糜加工行業(yè)的不斷發(fā)展。 現(xiàn)在普通的肉糜加工機(jī)還離不開(kāi)大量的人工操作，這樣的話肉糜生產(chǎn)的成本更高而且無(wú)法保證生產(chǎn)出來(lái)的肉糜的衛(wèi)生；因此研究開(kāi)發(fā)新型的肉糜加工機(jī)是必不可少的，只有肉糜加工機(jī)具有安全衛(wèi)生，操作簡(jiǎn)便，切肉效果好以及加工成本低，加工過(guò)程實(shí)現(xiàn)自動(dòng)化控制的特點(diǎn)，那么才能真正滿足國(guó)人的需求。 關(guān)鍵詞：食品加工；肉制品；肉糜加工技術(shù)；肉糜加工機(jī)
